Dump Cake
This is one of my favorite cakes to make because it is so easy and delicious.
You can change it up and use a chocolate cake mix or different fruit or add nuts, etc, It is also a great recipe to start with when you want to teach the young ones to bake. I think it's best warm out of the oven with ice cream.
1(21 ounce) can cherry pie filling
1(20 ounce) can pineapple chunks or 1 can pineapple tidbits
1(18 ounce) box yellow cake mix
1 cup melted butter
Directions
Dump and spread the cherry filling in a 9x13 pan then dump the pineapple with the juice on top evenly (DO NOT MIX TOGETHER) then dump the yellow cake mix on top evenly.
(DON'T STIR TOGETHER).
Then pour the melted butter on top slowly to cover it evenly.
Bake for an about 50-60 minutes at 350F until done.

My all time favorite birthday cake is German Chocolate Cake
INGREDIENTS
4 ounces German sweet chocolate, chopped
1/2 cup water
1 cup butter, softened
2 cups sugar
4 large eggs, separated
1 teaspoon vanilla extract
2-1/2 cups cake flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
FROSTING:
1-1/2 cups sugar
1-1/2 cups evaporated milk
3/4 cup butter
5 large egg yolks, beaten
2 cups sweetened shredded coconut
1-1/2 cups chopped pecans
1-1/2 teaspoons vanilla extract
ICING:
1 teaspoon shortening
2 ounces semisweet chocolate
DIRECTIONS
1. Line three greased 9-in. round baking pans with waxed paper. Grease
waxed paper and set aside. In small saucepan, melt chocolate with water
over low heat; cool.
2. Preheat oven to 350°. In a large bowl, cream butter and sugar until light
and fluffy. Beat in 4 egg yolks, one at a time, beating well after each
addition. Blend in melted chocolate and vanilla. Combine flour, baking
soda and salt; add to the creamed mixture alternately with buttermilk,
beating well after each addition.
3. In a small bowl and with clean beaters, beat the 4 egg whites until stiff
peaks form. Fold a fourth of the egg whites into creamed mixture; fold in
remaining whites.
4. Pour batter into prepared pans. Bake 24-28 minutes or until a toothpick
inserted in center comes out clean. Cool 10 minutes before removing
from pans to wire racks to cool completely.
5. For frosting, in a small saucepan, heat sugar, milk, butter and egg yolks
over medium-low heat until mixture is thickened and golden brown,
stirring constantly. Remove from heat. Stir in coconut, pecans and vanilla
extract. Cool until thick enough to spread. Spread a third of the frosting
over each cake layer and stack the layers.
6. In a microwave, melt chocolate and shortening; stir until smooth. Drizzle
over cake. Yield: 12 servings.

While it's not a traditional cake, I simply love a Cream Puff Cake and will make one for almost every special occasion. It's not all that difficult to make.
1 cup water
1 stick butter
1 cup flour
4 eggs
3 small boxes INSTANT vanilla pudding
or white chocolate pudding
8 oz. cream cheese (softened)
4 cups milk
Cool Whip (8 oz.)
Chocolate Syrup
Preparation:
Boil water and butter. Add flour and stir until well mixed. Cool for 2 minutes. Beat in eggs one at a time. Pour into a greased 9 x 13 pan, spread dough evenly and bake at 400 degrees for 30 to 35 minutes. The 'shell' will sort of climb up the sides of the pan. Allow shell to cool completely.
Whip the Cream cheese and add a small amount of milk at a time. Mix 3 boxes of pudding with the cream cheese and milk. Pour into crust, top with Cool Whip and drizzle with chocolate syrup.
Notes:
Spread dough with spatula or spoon coated with cooking spray

My favorite cake is PINEAPPLE UPSIDE DOWN CAKE
Place either crushed pineapple drained or pineapple slices in the bottom of a cast iron skillet. You can put maraschino cherries in the center of the slices or randomly on the crushed pineapple. Put some brown sugar on top of the pineapples.
Use a box of white cake mix. Pineapple juice can be substituted for the liquid. Put the mix on top of the pineapple and bake per directions for the cake mix. Let cool for a little and then turn out onto a plate.
You can use whip cream if you want on it
