Here is recipe. Enjoy!
For a 9" x 9" pan
Part A:
1 Cup brown sugar
1 Cup flour
3/4 Cup rolled oats
1/2 Cup melted fat (Tenderflake)
1 teaspoon cinnamon
Part B: 4 Cups chopped rhubarb
Part C:
1 cup white sugar
2 Tablespoons cornstarch
1 Cup water
1 teaspoon vanilla
Thoroughly mix Part A ingredients. Press half of mixture into greased pan.
Cover with rhubarb.
In a small sauce pan, combine sugar and cornstarch, stir in water. Cook until clear. Add vanilla. Pour over rhubarb.
Top with remaining crumb mixture and bake @ 350 F for about 1 hour
*** I use a 9 x 13 glass pan. I don't grease it, as I find the bottom layer gets hard. I use 1 1/2 times the Part A recipe, increase the rhubarb to 8 cups, and keep Part C as it is. I also sprinkle extra cinnamon on the rhubarb before adding the rest of the crumb mixture. Increase the bake time to about 1 hour and 10 minutes.
