Cream Pies
2c light cream
1c heavy cream
4 egg yolks
1/4c cornstartch
3/4c sugar
2 tsp vanilla
4 tbs unsalted butter
put the light cream and heavy cream and egg yolks in a heavy pan or a non stick pan. In a seperate bowl combine the cornstarch and sugar and add to the cream mixture..over medium heat wisk the mixture until it comes to a boil...let it boil for 5 mix but continue to wisk it or it will scorch. Then add the vanilla and unsalted butter and wisk until the butter is melted.
Now you can add whatever you would like to the mix.... I use 6 squares of bakers chocolate for chocolate cream.
You can add a cup of coconut
2 sliced bannanas
2 tsp of orange extract for a creamcicle pie.
I usually use grahmcracker crust.....
1 1/2 c of grahm crumbs
1/4 c sugar
1/2 stick of melted butter
mix in the sugar and grahm crumbs...then pour the melted butter in to make it meld togeter. Use the back of a tablespoon to form it into the pie plate.
for topping I do real whipped cream.
1 pt of heavy cream
1 tsp of vanilla
2tbs of powdered sugar
I use a kitchen aid mixer and let it mix until it forms peaks but you can use a hand mixer as well.
