baked beans,

bacon, butter beans, dark brown sugar and tomato sauce.
layer from bottom of pan, sauce, beans, sugar, bacon, sauce, beans, sugar, bacon, etc., till full.

backe at 300 degrees for 6 hours.

Spicey bean casserole

Brown 1/2 lb. ground beef with 1 chopped onion.
Mix with 2 cans pork n beans and 1 can baked beans and 3 or 4 sliced hot dogs. Add 1/4 tsp. crushed red pepper flakes, 1 tsp. mustard, 2 to 3 tbs. ketchup, 1 tbs. horseradish and 1/2 to 1 tsp hot sauce, mix well. bake at 325 degrees for about 1 hour till hot and bubbly

I don't know about exact recipe, but homemade fried bread.

Make regular yeast bread dough, let it rise. Take off a portion and flatten it like a pancake.
Cut into squares, place in a fry pan with oil and fry on both sides until it swells up to three times the width.

Spread butter, and/or cinnamon.

Serve with ham & Beans and corn on the cob.

Topped off with a nice slice of ice cold watermelon.

I make a lot of pasta salads. You can create your own recipes, there are so many different types/shapes of pasta, dressings and ingrediants you can use. I add grilled chicken or tuna or italian salami, pepperoni etc. Some crusty garlic bread and you've got a light, cool meal for those hot Texas summers.

YUMMY AND NO COOKING! I CALL IT:

"THE GREEN S_ HIT"
1- CAN CRUSHED PINEAPPLES
2- PISTACHIO PUDDING MIX (DRY)
3- COOL WHIP TOPPING


STIR DRY PUDDING INTO PINEAPPLE, THEN STIR IN THE WHIP CREAM!
PUT IN FRIDGE FOR AN HOUR- WOOHOO, DONE!

GOTTA LOVE THAT EASY, COOL, DESSERT OR SIDE DISH WITH NO FUSS!!

My favorite "Lite" Pastie that I used to make for my kids when they were little.

I or 2 cans of crescent rolls - separate the dough into a square (not the crescent triangle) so keep two triangles together.

Filling: Any leftovers you have .. like ham and cheese, chicken and rice, bbq chicken, mexican, chinese, etc.

Place a couple of tablespoons of filling in the middle of the square. Place another square of dough on the top and pinch the edges together.

Cook in the over as per instructions on the crescent roll can.

You will have beautiful golden brown pasties that look and taste heavenly without that heavy dough taste and feeling.

Use a salad or vegetables if you don't have them in the pastie

Note: I also sometimes make a sauce or gravy to pour lightly over the pastie.

If I make ham and cheese maybe a cheese sauce, chicken maybe a gravy etc.

My kids loved them, they looked beautiful and were very filling.

Spanish Macaroni Casserole

1 Cup macaroni
1/2 Cup diced Celery
1 large can diced tomatoes (I use Italian style)
1/4 Cup chopped Onion
1/2 Cup grated cheddar cheese (I increase it to 1 Cup)
salt & pepper to taste

White Sauce (medium thickness)

2 Tablespoons Butter or Margarine
2 Tablespoons Flour
1/2 Teaspoon Salt
1 1/2 Cups Milk

Cook macaroni in boiling, salted water until tender.
Prepare white sauce by melting butter in top of double boiler. Add flour & salt, stir to a smooth paste. Add milk, alittle at a time. Cook and stir constantly until smooth and thickened.
Drain macaroni and rinse.
In a large bowl, combine macaroni, celery, tomatoes (with juice), onion, salt & pepper, and 1/2 of cheese, and mix together (you can even diced green pepper). Place in a greased casserole dish (8x8).
Pour white sauce over top, evenly sprinkle remaining cheese on top.
Bake uncovered at 350 degrees F for 30 minutes.

This goes well with BBQ'd pork chops or chicken. You can also lightly fry up sauage (Italian or your favotite), and add it to the casserole before baking.

HASH BROWN CASSEROLE!
This is my favorite recipe to take to parties and picnics and I guarantee that EVERYONE will love it!

you will need
1 bag frozen shredded hash browns
1 package shredded cheddar cheese (2 cup bag)
1 can cream of chicken soup
1 container (12 oz) sour cream
minced onions optional

Mix hash browns, 3/4 of the cheese, sour cream and cream of chicken soup (and onions)together in a large bowl. I like to let the hash browns thaw first so its easier to mix, but either way is fine. After well mixed, transfer to a 13x9 glass or metal dish. Top with remaining cheese. Bake at 350 degrees for about 30 minutes.

Okay, one of our favorite summer dinners is barbecued teryaki chicken cubes, with garden salad, and a platter of fresh summer fruits. Yummy, healthy, and super easy.

Chicken Salad recipe from the Food Network it is soooooo good!

4 cups diced poached chicken, recipe follows
1 stalk celery, cut into 1/4-inch dice
4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
2 tablespoons finely chopped parsley
1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons kosher salt
Freshly ground black pepper
Directions
In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside.

In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.

When it is as hot as it has been this summer I do as little indoor cooking as possible, especially one that you must turn the oven on LOL

That's when central air conditioning is of its best use. It allows me to cook & bake without the worry of getting major heat stroke.

ok here goes:

1. Pick up phone book.
2. Flip to restaurant section.
3. Locate a good take out place.
4. Pick up phone and dial number.
5. Place order and give address.
6. Sit back and wait for food to arrive.

lol. I really cant think of any recipe at the moment so if all else fails follow the steps above Smile
