Easy Muffin Recipe - Low in Sugar & Fat

I know for many of you, sugar and fat content is a health concern. This plain muffin (not cupcake) recipe is low in both. It is easy to make and you can add anything you wish to it to make it your own. I learned this recipe back in junior high school when I was 13. I have been making it ever since.
2 Cups Sifted Flour
4 Teaspoons Baking Powder
1/2 Teaspoon Salt
4 Tablespoons Sugar
1 Egg
1 Cup Milk
4 Tablespoons Melted Fat or Oil
1/2 Teaspoon Vanilla Extract
Sift together dry ingredients and set aside.
Melt the shortening, or use oil.
Break egg into a mixing bowl and beat slightly.
Stir in the milk and melted fat (or oil), and any flavoring if desired.
Sift dry ingredients into the wet mixture, stirring just until the dry ingredients are moistened. The batter will be lumpy.
Spoon into paper lined muffin cups 2/3 full.
Bake at 400 degrees F for 20 - 25 minutes
Some variations for recipe:
Orange Muffins - substitute orange juice for all or half the milk and add 1 teaspoon grated orange rind.
Fruit or Nut Muffins- Add 1/2 to 1 cup of raisins, currents, dates, fresh fruit, or nuts to the dry ingredients.
Cheese Muffins - Use only 2 tablespoons of sugar, add 1 cup of grated cheese to dry ingredients, and use 2 tablespoons of melted fat or oil.
It really is a great base recipe. I use this to make blueberry or raspberry muffins quite frequently. Hope you all enjoy! |
